I dream of the day that Tapuy 🍷🍚 is as popular and diverse as Sake. Tapuy or Filipino Rice Wine can be found around the country, especially around the Cordilleras. ⛰️ This is a new series i'm starting where i hope to show people the potential of some Filipino products that i find really special. 🌄 Tapuy is made by simply Fermenting half cooked glutinous rice, by using a local starter known as Fufud, Bubod, etc. depending where you are. This starter culture, is a white, oval puck of hardened starch powder: a mix of cultures of molds, different yeasts and lactobacilli bacteria which jump start out the saccharification and fermentation process. It's unique to the area in which it's produced.  The cool thing about the process is that depending on which barangay you are in, the state of their soil, what's being planted in the vicinity, the weather, the heirloom variety of rice used, the composition of the Bubod, the lenght of the fermentation process, the person making it and the vessel in which it's made; the end flavor of the Tapuy, will be wildly different from place to place. This is why Geographical Indication for all our agricultural products is so important. All of these families, could be different wine makers, with their own secrets and stories to tell. All that information would then be passed down to the consumers, bartenders, chefs, etc. who then automatically become brand ambassadors for the wine and ultimately, our culture. We are currently running our Kalinga series on FEATR and have also previosuly released an in depth docu about Tapuy. Be sure to check them out! @featrmedia
