that's more like pasta sauce, add vegetable stock to make it soup but it's yummy and very healthy

Looks delicious! But I’m dairy intolerant, tomato gives me hives, bell peppers give me indigestion, & garlic/onion interfere with my medication.

I use a very similar recipe as a pasta sauce. Great for using up veggies that might be lingering at the bottom of the fridge.
