Salmon Red Curry Today I'm sharing one of my family's fave recipes. Yes, it is Salmon red curry. And I am using the non-GMO Salmon from @bluehousesalmon USA Raiseo, and I finally got a chance to use the butternut squash I harvested in November. Okay, let's check out the recipe below : Ingredients 1-2 cups of Salmon I cut them into a bite-size 1-2 tbsp cooking oil 1 1/2 tbsp of Red curry paste. I use Mae Ploy brand. Not necessarily to make it from scratch.  1/3 cup of coconut cream. The coconut cream has a thicker and creamier consistency than coconut milk 1-2 tbsp of fish sauce 2 tbsp of sugar. I use palm sugar 1 tbsp of oyster sauce 1/2 cup of coconut milk 1 cup of chicken broth or vegetable broth 1/4 cup of sweet bell peppers, mixed colors 1 - 1 1/2 cups of butternut squash cut into bite-size pieces 3-4 Kifir lime leaves, sliced thinly sliced for garnish 4-5 basil leaves 👩🏽‍🍳Directions Add cooking oil to a saucepan on medium heat, then add the curry paste and cook until the aromatic smell comes out. Then add 1/3 cup of coconut cream, stir them well with curry paste, and cook until bubbles or oily fat appear.  Then add butternut squash chicken broth, and let it cook for about 3-5 minutes, then add Salmon, coconut milk, and sweet peppers; add sugar and fish sauce to taste.  When the Salmon is cooked, then add Kifir limes leaves and basil. Turn the heat off; serve the Salmon curry with steamed rice.
