fall off the bone! At minimum you should be able to grab the bone and pull it out clean from the meat. molasses is the key.

I do the 3-2-1 method and wrap mine meat down in brown sugar, honey, and butter cubes for at 2 hour mark then unwrap and sauce the last hour Yum!
