This is an amazing dessert pizza (my new favourite among the less plated versions – more casual). Yes, there is a lot of sugar; however, a) you're only meant to eat a slice, and b) it is balanced sugar (meaning the flavours work together, not in contrast). The brioche is soft and pillowy, the brownie has a nice crunch alongside side the caramelised white chocolate bits, chocolate and hazelnut cream always works well, and the whipped cream and fresh strawberries with raspberry marshmallow give it a lovely burst of lightness.  Makes 8-10 slices Brioch dessert pizza: - 32g sugar - 13g vanilla sugar - 240g flour  - 3g salt  - 55g egg - 100g milk - 90g cubed unsalted butter - 7g dry yeast  Process: 1. Mix all dry ingredients except for yeast. 2. Mix yeast with milk until dissolved. 3. Mix dry ingredients with yeast, milk, and egg, except for unsalted butter, until a smooth dough forms. 4. Add unsalted butter and work into dough until it's soft again. Note: Yes, it's messy to begin, and do not add flour; if done correctly, it will come neatly into one dough.  5. Proof until double in size, deflate, and shape.  6. Add your toppings for the bake stage and bake at 180°C/356°F.  7. Once completed, cool slightly and add other toppings.
