if your gonna be chipping and all that to set the pan I'd just make a ramp jig for a grinder and cut tapered lines in the concrete and chip to depth

Yep. I’ve already done that. I have two ways. Firstly “dig” out the slab or secondly build up the floor. I’ve done both. I prefer digging out the slab

Use a bush hammer? Couldn't you just use some Ardex Feather Finish to slope the concrete.
