I like to add my own extras to a box mix and use shredded rotisserie chicken to make this simple and flavorful Jambalaya! You can do the fully homemade version too (see the alternatives in the recipe below) and find the FULL video on YouTube ✨ 4 Tablespoons Olive Oil 12 Ounces Sausage (Pork, Beef, or Turkey) Cut Into Bite-Sized Pieces 1 Rotisserie Chicken, Meat Removed and Shredded ½ Medium Yellow Onion, Chopped 2 ribs celery, chopped 3 cloves Garlic, minced ½ Red Bell Pepper, Chopped ½ Green Bell Pepper, Chopped ½ Yellow Bell Pepper, Chopped 1 Box Zatarain’s Jambalaya Mix + 2 1/2 cups Water or Chicken Broth Salt and Black Pepper, To Taste Tony Chachere’s Original Creole Seasoning, To Taste If you don’t want to use Zatarain’s, swap in 2 cups jasmine rice + 4 cups broth or water, 2-3 tablespoons Tony’s seasoning (or more to taste) and a bay leaf.  Instructions  Coat your skillet with 2 tablespoons of olive oil and add your cut up sausage and sauté for about 5 minutes on medium-high heat. Add the shredded chicken and continue to cook until your sausage is cooked through about 5 minutes. Turn off the heat and cover. In a large pot or dutch oven, drizzle the remaining olive oil and add the onion, garlic, celery, and peppers. Cook over medium-high heat until they get soft and fragrant, about 10 minutes. Once tender, add the water or broth and the Jambalaya mix. Stir, bring to a boil, then add the cooked sausage and chicken. Season with salt, pepper, garlic powder, and Tony seasoning to taste.
