Seafood pasta, but make it restaurant quality! What I mean by that is taking the time to make your own seafood stock and then turning that into a super flavorful sauce. This recipe is a bit more involved but, hey, Valentine's Day is coming up and food is the best way to impress someone. Recipe as follows: 1 whole crab(500-600g by weight approximately, cleaned and scrubbed)  6 prawns  12 clams  - Steam the crabs for 4 minutes, at the 4 minute mark, add in the prawns and clams, steam for an additonal 4 minutes  - Allow the seafood to cool and then begin to peel the prawns and crab, reserving the shells for later use. The clam meat should also be peeled, but the clam shells can be discarded For the stock - Add in all the prawn and crab shells into a large pot  - Add in all the juices that were collected from the seafood during the steaming process  - Add in enough water to cover the shells  - Boil for about 30-45 minutes, until the liquid has reduced to 1/3 the original volume. Set the stock aside until ready to cook the pasta  For the pasta:  110g dried @San Remo Pasta  linguine - Boil the linguine in a large pot of unseasoned water - Only boil it about 50% of the way through, if the packaging mentions that the pasta should be boiled for 10 minutes, boil it for 5 minutes  For the sauce:  10g garlic  10g ginger  20g shallots  10g red chilli(optional)  10g olive oil  10g white wine(optional)  5g lime juice  20g butter, cold  10g chopped herbs(parsley, chives, dill all work well)  All the reserved seafood stock  - Finely chop the garlic, ginger, shallots and red chilli  - Add the olive oil into a pan and saute the aromatics on medium heat for 2 minutes  - Add in the white wine and cook it off for about 1 minute, if using  - Add in all of your seafood stock and boil for 2 more minutes - Add in all your pasta in one go, and allow the pasta to boil and continue to cook. If the liquid level drops too low, add in some of the water that was used to boil the pasta in  - Once your pasta is close to al dente, drop the heat down to low.
