Recipe for pudding  3 to 4 pandan leaves  2 ears corn, shucked ½ cup mini tapioca pearls  4 cups room temperature water ½ cup hot water ½ cup granulated sugar A pinch of Kosher salt TK toasted sesame seeds Sweet coconut sauce  1 13.5oz can coconut milk 1 cup granulated sugar  For the sweet coconut sauce Combine the coconut milk and sugar in a saucepan over medium-high heat, whisk to combine. Bring to a boil then turn heat down to medium-low heat and let it simmer for about 10-15 minutes or until you like the consistency.  Let cool or store for up to TK. For the pudding Remove kernels from the cob then break the cobs in half. Set the kernels aside. Place the cobs in a small saucepan along with 4 pandan leaves and 4 cups of water. Bring the water to a boil over high heat. Once boiling, turn it down to medium-low and simmer for 10 minutes. While waiting for the cobs to simmer, soak ½ cup of tapioca pearls in hot water to bloom. Remove the cobs and pandan leaves from the saucepan with tongs and discard. Add the corn kernels, ½ cup of sugar and a pinch of salt into the water, give it a good whisk to combine everything. Bring it to a boil, turn the heat down to a simmer for 5 minutes. Skim off any foam that floats to the top. Drain the soaked tapioca pearls, then add it to the pan and let it simmer for another 3 minutes, make sure to skim as you go. The tapioca pearls are done when they float. Transfer to a bowl and let it cool for 10 minutes, then refrigerate for at least 2 hours before serving. Serve in small bowls with sweet coconut sauce and toasted sesame seeds.
