Place one gyoza wrapper in your hand. Add about 1 teaspoon of filling to the center. 	3.	Dip your finger in water and moisten the edge of the wrapper. Fold in half and pleat the edges to seal tightly. Repeat with remaining wrappers. 	4.	Heat oil in a non-stick or cast-iron skillet over medium heat. Arrange the gyoza in a single layer, flat side down. 	5.	Cook for 2–3 minutes until the bottoms are golden brown. 	6.	Carefully add the water to the pan and immediately cover with a lid. Steam for 4–5 minutes, until the filling is cooked through and the water evaporates. 	7.	Remove the lid and cook for another 1–2 minutes to re-crisp the bottoms.
