APPLE PIE SOURDOUGH BAGEL BOMBS Talk about a dream fall breakfast ☁️ Recipe below OR go to my website through the link in my bio 🤎  #Recipe Details (makes 8): Sourdough Bagel Dough: - 1 3/4 cups all-purpose flour @Bob’s Red Mill  - 2 tsp baking powder - 1/4 tps baking soda - Pinch of salt - 3/4 cup greek yogurt - 1/2 cup unfed sourdough discard or starter starter or discard (sub: another 1/2 cup greek yogurt) Apple Pie Filling: - 2 apples of choice (I used Granny Smith), diced - 2 salted butter - 1/3 cup maple syrup - 1 tbsp cinnamon - 1 tsp vanilla - 1 tbsp cornstarch + 2 tbsp cold water, for slurry - 8 tbsp cream cheese, for filling @Philly Cream Cheese  Cinnamon Crunch Topping: - 2 tbsp salted butter, softened - 1/4 cup all-purpose flour - 1/4 cup brown sugar, light or dark - 1 tbsp granulated sugar  - 2 tsp cinnamon - 1 egg + 1 tbsp water, for egg wash Instructions: Preheat oven to 375F. Line a baking sheet with parchment paper; set aside. Start by preparing the cinnamon crunch topping. In a medium bowl, combine the softened butter, flour, both sugars, and cinnamon with a fork or using your hands, until a crumbly mixture forms. Set aside. Prepare the apple pie filling.  In a medium saucepan over medium heat, melt the butter. Add the diced apples, maple syrup, cinnamon, and vanilla. Cook until the apples are just soft. Then, make a slurry by mixing together the cornstarch and water, and pour the mixture into the pan. Mix and cook for another 2 minutes until the mixture is slightly thickened. Remove from heat and set aside. Then, make the sourdough bagel dough. In a large bowl, combine the flour, baking powder, baking soda, salt, greek yogurt, and sourdough discard. Mix until well combined. The dough is going to be a little sticky, but just trust the process! Lay the dough onto a floured surface, and knead a couple of times with your hands, until smooth and pliable. If the dough still seems too sticky, add 1 more tbsp of flour at a time, and continue to knead until it comes together more and is moldable! Shape the dough into a round ball with your hands. Divide the dough into 8 equal-sized pieces. Flatten each piece into a circle, and then place 2 tsp of the apple pour filling in the center of each, followed by ~1 tbsp of cream cheese. Fold the sides of the dough over the filling, pinch together to seal, and use your hands to shape into a ball. Place the bagel bombs onto the prepared baking sheet. In a small bowl, beat the egg and water together for the egg wash. Brush the tops of each bagel bomb with the egg wash. Then top with more apple pie filling, and sprinkle the tops with the cinnamon crunch topping. Bake at 375F for 18-22 minutes or until golden brown.
