Welcome to ✨Dark by Dinner✨ a little series of very good things to cook when the nights draw in and dinner calls for something a bit cosier. Kicking things off with some epic miso peppercorn butter noodles and seared steak. Not a bad way to start proceedings. For 2 1 thick cut steak (I used sirloin) 300g fresh udon (I used @itsuofficial) 1 tbsp black peppercorns (toasted) 50g unsalted butter 2 garlic cloves, finely grated 2 tbsp white miso 1 tsp rice vinegar 1 tsp honey 1 spring onion, finely sliced for garnish 1. Toast the peppercorns in a dry pan until fragrant, then roughly crush and mix into the softened butter with the garlic and miso. 2. Season the steaks well with salt and sear in a smoking-hot pan with a little oil for 2–3 mins each side. Add 1/4 of the peppercorn butter, baste, then rest for 7 mins before cutting into chunks. 3. Cook the noodles according to the packet, reserving some noodle water. 4. In the steak pan, melt the remaining peppercorn butter, add the noodles, steak resting juices, rice vinegar & honey, followed by some noodle water to loosen. Toss until glossy and creamy, loosening with more noodle water if needed and season to taste. 5. Pile into bowls, top with the steak and finish with spring onions.

🎭 #music #edit #michaeljackson #foryou #lyrics
