You have to keep the heat around 700-750 so the dough is cooked and outside not too burnt & keep rotating. I made the same mistake with the Roccbox.

Let your dough rise for three days. Not sure that would help with the tears, but get 00 flour. Much better.

You have to turn those like every 7 seconds or that will burn. It’s like 900° in that oven

Do you have a temp gun? We have an Ooni oven and that made all the difference in determining heat and adjusting the flame? Not the body temp gun type
