Ingredients: - 2 large chicken breasts, skinless and boneless - 1 cup quinoa - 2 zucchinis, sliced - 1 red bell pepper, sliced - 1 teaspoon dried oregano - 2 lemons, juiced and zested - 3 tablespoons olive oil - 3 cloves garlic, minced - Salt and black pepper to taste - 1/4 cup chopped fresh parsley (optional) Instructions: 1. Preheat oven to 400°F (200°C). 2. Cook quinoa according to package instructions. 3. In a small bowl, mix 1 tablespoon olive oil, lemon juice, lemon zest, oregano, garlic, salt, and pepper. 4. Place chicken breasts in a ziplock bag or shallow dish, pour half of the lemon marinade over, and marinate for 10 minutes. 5. Spread zucchini and red bell pepper on a baking sheet, toss with remaining olive oil, salt, and pepper. 6. Bake vegetables for 15 minutes. 7. While vegetables bake, heat a skillet over medium heat, add a tablespoon of olive oil, and cook marinated chicken breasts for 6-7 minutes per side until cooked through. 8. Slice cooked chicken. 9.
