The chocolate & mint cheesecake recipe🎄🍫 Ingredients for crust:  250g chocolate butter cookies (or 250 g vanilla butter cookies & 1 tbs cacao powder) 150g melted butter (not hot) Grind the cookies into the small pieces or flour like texture. Mix with melted butter until all the crumbs are soaked and the texture is evenly buttered. Form the crust using a glass or hands and spatula (one half for bottom & one half for sides). Let it cool in the fridge 10 minutes. Bake in the preheated to 180C oven 10 minutes. Let it cool a bit. Add chocolate mixture to it and mix again with a whisk until it’s creamy like sour cream.  Pour this cheesy base onto the cooled crust.  Bake in the preheated to 135C oven for 1,5-2 hours on a medium level. Place a bowl or a baking dish with boiling water on the bottom of the oven so your cheesecake wouldn’t bubble.  Let it cool in the oven after baking with a slightly open oven door for 3 hours until the oven is fully cooled.  Cover the cheesecake in its baking dish with cling film and leave it in the fridge overnight or min. 5 hours.  for the mint ganache: 30g fresh mint  150 ml heavy cream 100 gr chocolate  Chop the mint finely and add to the heavy cream in a saucepan. Heat them together but not boil. You can even grind the mint in a blender if you don’t like crumbly texture.  Pour the heavy cream over the chocolate pieces in a bowl. Let it sit 5 minutes. Mix until smooth and incorporated. Make sure it’s not very hot. Pour over the cheesecake in a baking dish and let it cool 15 minutes.
