Chocolate Pistachio Biscotti (recipe courtesy of Also The Crumbs, Please) - Full disclosure: it took me two attempts to get these biscotti - or cantucci, as they’re traditionally known - absolutely right, and let me tell you, I was a woman on a MISSION. 🔥🔥🔥 While this first batch was a hit with my family, they didn’t quite have the distinctive “snap” that biscotti need in order to pass the Dunk Test. If you’re a borderline maddening perfectionist like me, here are a few pointers: 1. If you need new pans, get new pans. I’ve had my old faithfuls for almost a decade and they were really messing with my baking time here. Lighter pans won’t brown your biscotti before they’ve properly baked. The @Nordic Ware ones are 😘🤌🏼 2. For every 1/8-inch thinner you make your biscotti, shave a minute of time off each side on your second bake. I went with 7/8-inch, so, 7 minutes on each side. 3. Listen to my mother who makes biscotti every Christmas and buy the light-tasting olive oil. The flavour is way less earthy, and you can fry with it later since it has a higher smoke point.
