it’s the carrot thought so i understand but it will always be the best🤎 you’ll need: - 2 large (or 3 medium) carrots, grated - 240ml (1 cup) of olive oil - 4 eggs - 200g brown sugar - 1tbsp ground cinnamon - 300g self-raising flour (if using plain, see tip below) - 2tsp baking powder (to serve): - greek yogurt (full fat preferably) - chopped walnuts - a cup of tea method: 1. begin by grating the carrots on the medium setting (they don’t need to be super fine! 2. in a large bowl, add in the carrots, olive oil, eggs, sugar, cinnamon, flour and baking powder all at once. 3. either using a hand whisk or an electric whisk, whisk tje mixture until no lumps of flour remain (it will look lumpy because of the carrots!). 4. pour into a 900g lined loaf tin and bake at 170c for at least 1 hour. 5. check after 45 minutes to see if it’s browning too much - if so, cover the top loosely with foil. poke a skewer through the centre to check if it has cooked! 6. once baked, remove from the oven and allow to sit in the tin for a few minutes before removing the cake and peeling away the paper. 7. carefully place on a cooling rack (or just slice straight away if you’re impatient like me)! 8. serve warm in thick slices, topped with a dollop of greek yogurt and a handful of chopped walnuts… please enjoy xxx🥕🤎(if using plain flour, just add an extra 3tsp of baking powder!) #cake #carrotcake #EasyRecipes #caketok #yogurt
