Same principle that rice cookers operate on. While there's water it stays 100°C when all the water boils off temp rises above 100 and it shuts off.

never because of the heat transference of the glass that's cooler than the boiling water so the heat transfers to the top of the glass then cools

👎 water below wont pass 100° (for pure H²O) but the rising bubbles of steam can surpass 100° but require a lot more heat due lowered conductivity

Ehhhhh…. Boiling is just when the partial pressure of the water vapor being formed is > 1 atm. So ur water won’t be sticking around: it’s evaporating
