American bread is whitened with up to seven different chemical bleaching agents — all banned in Europe. The FDA's flour standard permits benzoyl peroxide (the active ingredient in acne cream), chlorine gas, chlorine dioxide, nitrogen dioxide, azodicarbonamide (found in yoga mats and shoe soles), acetone peroxides, and nitrosyl chloride. Seven chemicals. All to make flour whiter. None of them add nutritional value. None of them improve safety. They exist to make bread look more appealing on a shelf. A peer-reviewed study published in Springer Nature found that flour bleaching agents degrade vitamins E and A, generate carcinogenic free radicals, and leave residues linked to liver damage, chronic inflammation, and tumour-promoting effects. The EU banned every single one of these chemicals from flour in the 1990s. The UK banned chlorinated flour. China banned benzoyl peroxide. European bakeries achieve the same white flour through natural aging and improved milling — no chemicals required. They proved it's unnecessary. The US still allows it — protected by a 1914 Supreme Court ruling that legalised toxic additives as long as they're "not immediately harmful." European bread labels list flour, water, salt, and yeast. American bread labels say "bleached." One word that covers seven chemicals your bread was soaked in before it ever reached the oven.
