Best bagels ever. Recipe below  Pre-Ferment 2 ½ cups bread flour   ½ tsp instant yeast  1 ½ cups warm water (110 °F)  Dough 2 cups  bread flour  ½ tsp instant yeast  1 ½ tsp coarse salt  1 tsp light honey  2 tsp apple cider vinegar  Water bath 10 cups of water ½ cup Dark Beer 1 tsp *Baked* baking soda  3 tbsp dark brown sugar   Instructions - Pre-ferment.  To a medium bowl, add bread flour and yeast.  Mix until combined then add your water. Let that sit at room temp for 2 hours. Right on top of that add your ½ tsp yeast, salt, honey and vinegar. Stir until combined then add in half of your bread flour. (only 1 cup) Add flour until you have a kneadable dough ball. Knead that until you have a smooth, supple dough. Divide your dough into 6 equal balls, shape each one then cover with damp towels for 1 hour. Grab a heavy baking sheet that will fit in your fridge, put a piece of parchment paper on top then add a light layer of coarse cornmeal. To shape your bagels, gently flour the tops of them.  Flour your thumb then make a hole straight through the middle. Twist them around your fingers til you get a 1 inch hole. Re-Dampen your towels, cover then refrigerate your bagels for 1 hour. To bake, heat your oven to 425°F. In the meantime add 10 cups of water to a pot then add *baked baking soda, your favorite dark beer and brown sugar. *Simply bake ½ a cup of baking soda 30 mins at 350F then let it cool. Bring to a boil then add as many bagels as you can fit without them overlapping.  Boil them for 1 minute per side. (longer for chewier bagels, shorter for less chewy) Remove them with a slotted spoon to a baking tray. Immediately brush with egg wash (1 egg white + 1 tsp water) then sprinkle with whatever toppings you like. Transfer into your preheated oven for 5 minutes. After 5 minutes, rotate the tray then bake for 16 more minutes (flip halfway through) Take them out and let them cool on a wire rack.
