Amy’s Hamentaschen Knishes   For the Dough   1 teaspoon baking powder  1 teaspoon sugar   1 teaspoon salt  3 cups flour  3/4 cup warm water  2 eggs  1/3 cup oil  1 egg (for egg wash )  For the filling ( you can fill these with anything you like , below is the filling I usually use)  1 lb potatoes , peeled and cut into 1 inch chunks  1-2 large onions, sliced and sautéed  2-4 teaspoons Olive oil,(or more to taste)   salt and pepper to taste   To Make the Dough   1. Combine baking powder, sugar , salt and flour.  2. Add remaining ingredients , (adding the water slowly because you might not need all of it) gently stir until mixture forms a dough.  3. Knead for 20-30 seconds, do not over handle the dough.   To make the Filling  1. Boil potatoes until soft.  2. Mash potatoes using a potato masher until fairly smooth and creamy.  3. Combine mashed potatoes, sautéed onions, oil, salt and pepper . Set aside to cool.   To make the Hamentaschen Knishes   1. Pre heat oven to 350. 2. Roll out dough to about 1/8 inch thickness , using a 3-4 inch circle cookie cutter cut out your circles. 3. Place about 1 teaspoon of the filling in the middle and gently pull up the sides, creating a triangle as you go.  4. Place formed Hamentaschen on a parchment-lined baking sheet.  5. Gently mix your egg and lightly coat each Hamentaschen using a pastry brush.  5. Bake for 20-25 minutes or until the Hamentaschen are golden and the bottoms are a golden light brown color. Enjoy!
