Elote-Inspired Pasta Salad 🌽 I’ve been making a version of this Elote Pasta Salad for a few years now, and it’s always a hit. It’s smoky, creamy, bright with lime juice, and packed with all the flavors of classic street corn like charred corn, lime juice, cotija cheese, jalapeño, and cilantro. Everything gets tossed with spiraled fusilli pasta in the creamiest chili-lime dressing, and honestly, it tastes even better after sitting in the fridge for a bit. The fire roasted corn and chipotle peppers add so much smoky flavor, while the lime juice, cilantro, and fresh toppings keep everything bright and balanced. And if you have Tajín, definitely finish it with a sprinkle on top. Ingredients below, full recipe is in my bio!
