Baked honey chipotle fish tacos with creamy avocado slaw The most delicious tacos with only 2 main parts: a smokey, flakey dish topped with a crunchy but creamy slaw. Low effort enough to be whipped up any night of the week. Swap fish for any protein you like, and feel free to buy a premade marinade if you don’t want to do it yourself. you will need to serve 2 459kcal & 34g protein for 2 tacos 300-400g white fish fillets, I used cod marinade: 1 tbsp honey, 1 tsp chipotle paste, 1/2 tsp of smoked paprika and cumin, 1 tbsp tomato puree, 1 tsp garlic granules, salt and pepper. Small tacos of choice Feta to serve 1/4 white cabbage 1/2 medium avocado (keep the other half) 1 heaped tbsp thick yoghurt 1 heaped tsp honey 2 tbsp jalapeño brine from the jar and 1-2 tbsp of the jalapeños 1 spring onion 1 tsp garlic paste or 1/2 tsp garlic granules Juice of 1/2 a lime and the zest (keep the other half) 1 level tbsp American mustard Dry the fish fillets, season with salt and pepper and dust with a little flour. Cover all over in the marinade and leave to sit for 15 minutes or longer in the fridge. Preheat the oven or air fryer to 205c fan. Shred the cabbage finely. Blitz the dressing ingredients with a pinch of salt, taste, and add more jalapenos for spice if needed. Mix through the cabbage. Bake the fish for 8-10 minutes, depending on the size of the fillets. Feel free to finish under the grill for an extra smokey char. Toast the tacos well, I like to get some charred patches. Load up with some fresh avocado, flakes of the fish and a handful of slaw. Finish with feta and a squeeze of extra lime if you wish. #healthyrecipes #DinnerIdeas #highproteinmeals
