🍄 MUSHROOM HACK 🍄  Did you know you’re supposed to boil mushrooms before frying them? No, you’re not going to end up with something that tastes like meat (duh), but what you do get is the most superior form of mushroom texture. Believe me, it’s a gamechanger!  It actually gets super sciencey and is really fascinating! Here’s a nice summary from mushroom expert @Jim Fuller for a better explanation 👉 “By boiling it first you make sure all the inside cells break open. It’s difficult and slow doing this by frying because you are only heating from one side, and oil gets cooled down by the internal mushroom moisture. Best possible flavour because now you have access to all the inner flavour compounds and you can make them delicious by browning (Maillard reaction)”  ✨For anyone wanting to make this BOMB stir-fry recipe, here it is✨ 350g mixed mushrooms (I used shiitake and pearl oyster) 1 tsp ginger, grated 2 cloves garlic, minced 1 red chilli, chopped (adjust to taste) 2 stalks green onion, chopped (whites & greens separated) Sauce: 1.5 tbsp soy sauce 1.5 tbsp mushroom oyster sauce  Small splash dark soy, for colour 1 tsp brown sugar  1/8 tsp ground black pepper 1 tsp sesame oil 1 green onion, thinly sliced (for garnish)  Sesame seeds  Method:  1. Clean and slice your mushrooms. Don’t slice them too thin as they will cook down slightly.  2. Add water to fill the base of your pan (enough to submerge the mushies) and bring to a boil. Add in your mushrooms and boil with lid off. You can choose to either completely boil off the liquid until the pan is dry or you drain it off at some stage like I did in the video.  3. Add a splash of oil into the pan and fry mushrooms until golden. Add in the ginger, garlic, chilli and white parts of the green onion. Fry for another minute until fragrant.  4. Add in the soy sauce, oyster sauce, dark, soy sauce, sugar and pepper and toss well to coat. You can add 1-2 tbsp of water here if needed.  5. Turn off the heat and add sesame oil. Garnish with green onion and sesame seeds.
