Episode 31: Everything but the Kitchen Sink 🍫🥨🍯🥔 Ingredients 1 batch same-day focaccia dough (page 22 in my cookbook, page 34 of my Focaccia Fundamentals Guide or pinned to top of my page here)  2-3 tbsp melted salted butter to line tray 6 Reese’s Peanut Butter cups - chopped  6 Daim/Heath/Skor bars - chopped  2 tbsp salted caramel (I use the recipe by @Sally’s Baking ), plus more for serving after baked  1.5 tbsp peanut butter, gently warmed so spreadable  1 cup (50g) salted pretzels, finely crushed - measure in cup before crushing 3/4 cup (30g) crushed salted potato chips. used thicker ridged ones. Ruffles would be great here. 1.5 tbsp melted salted butter, to dimple Flaky sea salt to finish  Method -mix up dough and incorporate 1/3 of the chopped chocolate bars in during the 2 sets of stretch and folds  -when finished proofing in bowl, tip onto tray lined with parchment and melted salted butter and stretch out. Add in 1/3 more of the chopped chocolate and drizzle over the softened peanut butter and salted caramel.  -fold into thirds as instructed in dough recipe and sprinkle over plenty of crushed pretzels over the dough before flipping over and covering to proof in tray (this will be the pretzel crust on base).  -preheat oven to 220C/430F with rack in lowest position.  -sprinkle over remaining chocolate, pretzel crumbs, potato chips and a drizzle of salted butter. Sprinkle with flaky sea salt. -bake for 18-24 minutes or until golden. Remove to cooling rack, wait for at least 15 minutes before cutting in. Serve with a drizzle of salted caramel.
