These rosemary lemon shortbread cookies are AMAZING and are my go to every year to give as little holiday gifts. And they’re so easy to make!  Cookies:  1 cup butter, room temp 2/3 cup powdered sugar 1 tbsp lemon juice 1 tbsp lemon zest 2 teaspoon honey 1 tbsp fresh rosemary, finely chopped 2 cups all purpose flour 1.2 teaspoon baking powder 1/4 teaspoon salt Icing: Lemon juice Powdered sugar Instructions:  In a bowl, add flour, baking powder and salt. Whisk to incorporate and set aside. In another bowl, with a hand or stand mixer, beat the butter for a few minutes on medium speed until light and creamy. Turn mixer to low and gradually add in powdered sugar. Mix until incorporated. Add in the lemon zest, lemon juice, honey, and diced rosemary, mixing them through the dough. Slowly add in flour mixture until incorporated. Use your hands to bring dough together, because it will be somewhat flakey at first.  Turn out the dough onto a floured surface and halve it. Roll each half out into logs about 2 inches in diameter. Roll the logs in parchment paper or plastic wrap and chill in the fridge for one hour. Preheat oven to 350 and line a cookie sheet with parchment paper or make sure it is non stick.  Once out of the fridge, cut the logs into pieces about 3/4 inch thick (doesn’t have to be perfect, shortbread is forgiving).Bake cookies for 12-15 minutes until just golden around bottom edges. Move to cooling rack. Whip up the icing just combining powdered sugar and lemon juice until desired consistency.
