Part 2 | How to make Focaccia in a day, this is part 2 of 2. For this Focaccia you will need 500g of plain flour (or 400g plain flour and 100g 00 flour) 425g Water 5g Instant Yeast 1 Tablespoon of Maple syrup 2 good pinches of salt Olive oil (lots) First add your maple syrup and yeast to your warm water (you do not want this to be much hotter than blood temp otherwise you can kill the yeast) Let it sit for 10 mins so that the yeast has dissolved and had time to get nice and foamy. Add your salt to your flour mix it all up and then add the water/yeast mix, making sure you get everything out of the jug. Mix the dough together, you do not need to knead it. Drizzle some olive oil over the top and cover with a tea towel. And let it rest for 15 mins. After 15 mins, fold the dough in from the 4 corners, cover again and rest for another 25 mins. Do this a further 3 times. Your dough at this point should have a great wobble. Glug a little more olive oil on the top and then cover with cling film and leave for 1 hour. After 1 hour, tip it onto a well oiled tray, with a little more olive oil on top, cover it back up and then it needs 1 more hour! This bread takes so long but it is worth it. Then finally turn your oven on to 220c and remove the cling film, add a little more oil and push in your holes add lots of cracked salt or some flakey salt, herbs of your choice and then FINALLY in to the oven. 220c for 15 mins.
