Sausage, spinach, and mascarpone ravioli and pumpkin sage cream sauce 😍 I’ve had this recipe in my head for WEEKS and finally tried it and it was AH-MAZING!! The garden gave me so many pumpkins this year and it’s forced me to get creative with how I eat them. This did not disappoint!  For the pasta:  2 cups all purpose flour 1 tsp salt  3 large eggs 2 egg yolks 2 tbsp olive oil Make pasta dough (tons of YouTube videos about how to do this!) and run it through a pasta machine to make long sheets. I used up to setting 6.  For the filling: 1 lb spicy Italian sausage (for vegetarian version, use a meat alternative) 1 bulb of roasted garlic  1 cup mascarpone cheese  1/2 cup chopped spinach  1/4 cup Parmesan  1/2 cup mozzarella  Salt and pepper to taste  Sear sausage until browned and cooked through. Pulse in food processor along with the garlic until fine. Add to a bowl with remaining ingredients and mix. Make your ravioli, and cook for 3-5 minutes in salted boiling water.  For the sauce: 2 tbsp butter 2 tbsp fresh sage, chopped 7 oz pumpkin puree  1 pt. Heavy cream  1/4 c grated pecorino Romano cheese (or Parmesan) Salt and pepper to taste.  Melt butter in a sauce pan over medium heat, add sage and simmer for 1-2 minutes until butter is slightly browned. Add pumpkin, heavy cream and cheese and mix well.
