WELCOME TO STEWS FROM AROUND THE WORLD 🌍 A warm welcome back to stews from around the world. In season 1, we travelled all around the world from our kitchen, discovering some of the best stews the world had to offer. This is season 2 and today’s episode takes us to Peru where we will be making a classic ‘Estofado de carne’ also known as Peruvian Beef Stew. Rich tender beef is stewed down in aji panca paste, spices and finished off with a generous serving of fresh peas. This is the ultimate winter comfort food. I can’t wait to explore more Peruvian stews. (4) 500g beef shin/brisket 1 brown onion 2 garlic cloves 1 large tomato grated 1 1/2 tbsp aji panca paste 1 tbsp tomato paste 150ml red wine 1 tsp ground cumin 2 sprigs fresh oregano/2 tsp dried 2 bay leaf 250ml water/stock 1 small potato 1 small carrot 50g fresh/frozen peas 20g fresh coriander Servings: White rice Pickled onion Fresh coriander (1) Season your beef with salt and pepper ahead of cooking. Heat up a large stew pot on a medium high heat and add some neutral oil. Once hot, add the beef and sear on each side, then remove 
(2) Add the onion and cook for a few minutes until soft. Add the garlic and cook for 30 seconds. Add the grated tomato and cover and cook for a few minutes. Add the tomato paste alongside the aji panca paste. Mix well and cook for a few minutes uncovered.
 (3) De glaze with the red wine and let reduce until half. Add some ground cumin and mix well. Add the beef back to the pot, alongside the water, oregano and bay leaves. Bring to a boil and reduce to a simmer and cook for 2 hours. (4) Finally remove the lid and add the potato & carrot and cook uncovered for around 15/20 minutes until both are cooked through and the stew has thickened nicely.
