Red velvet cake uses acids like vinegar or buttermilk to make the cake more tender (more “velvet” like) and when mixed with cocoa it turns reddish :)

Red dye causes an actual chemical reaction, plus vinegar. It’s really not “just” chocolate cake dyed!
