I start the same way but as soon as the water boils, I cover, turn off the heat & let sit for exactly 10 minutes. Perfect every time. Pasture raised.

I boil them for 10 minutes then put them in cold water but not ice because the shells tend to stick to the eggs when I use ice water.

I add to boiling water, then after 10 minutes out then right into an ice bath. This is the only way I’ve found where the shells practically fall off.
