Lab-grown mozzarella is heading to restaurant menus in California — and the FDA never formally reviewed it. New Culture just secured a US patent for animal-free mozzarella made from precision-fermented casein grown in a bioreactor. They declared their own product safe through a loophole called "self-affirmed GRAS" — where a company hires its own panel of experts to certify safety, then brings the product to market without the FDA ever conducting an independent review. The FDA "strongly encourages" companies to submit for formal review. It's not mandatory. New Culture hasn't submitted one. Four companies have now used the same loophole to bring precision-fermented dairy proteins to market in the US. The casein is being used in mozzarella that melts, stretches, and browns like conventional cheese. Nancy Silverton's Pizzeria Mozza in Los Angeles is preparing to serve it. The ingredient list includes sunflower oil, coconut oil, starch, sugar, and salt alongside the lab-grown protein. No disclosure is required on the menu telling you the cheese was grown in a bioreactor instead of milked from a cow. You could order a pizza and never know. A company declared its own lab-grown dairy protein safe, skipped FDA review through a legal loophole, and is putting it on restaurant menus.
