Egg rolls don’t have potatoes. Take seems more like undercooked bubble and squeak (cause very browned and crispy pieces) with an egg.

I would definitely call this egg roll in a bowl. Only difference in how I make it is with beef and not bacon but bacon sounds like a way better idea😳

We do ground pork with cabbage, sliced carrots cooked in sesame oil, soy sauce and hoisin. Then serve over rice 👌🏻
