Vegan Phở Broth 🍜 Phở is the most known Vietnamese dish worldwide and it is considered the national dish of Vietnam. It is made with rice noodles(bánh phở) typically served with thin slices of beef, the key of Phở is the broth- which is light and aromatic, normally simmered for hours with bones and a combination of spices, despite the light colour, it has a deep, savoury flavour. For the vegan version, we used vegetable stock, shiitake, daikon radish and carrot, and the same spices to create a rich and flavourful soup base in which you can cook your favourite ingredients and make your best bowl of vegan Phở😋 Ingredients(for 4) dried shiitake mushrooms 6 lemongrass 2 stalks a medium-sized onion ginger 50g 2 shallots hot water 1200ml vegetable stock/bouillon powder - enough for 1200ml water, depends on the brand  cinnamon stick 1 bay leaves 6 star anise 3 black pepper 1 tsp cloves 1 tsp fennel seeds 1 tsp daikon radish 300g carrot 100g vegan fish sauce 5 tbsp rock sugar 20g salt Recipe 1.Soak the shiitake mushrooms in 300ml water for 1 hour. Smack the lemongrass and slice it. Cut the onion and shallots in half, slice the ginger, daikon radish and carrot. 2.Heat up a non-stick pan over medium heat, add the lemongrass, onion, ginger and shallot, toast and turn for a few minutes until it’s slightly charred on the outside. Take everything out.   3.Toast the cinnamon stick, bay leaves, star anise, nutmeg, black pepper, cloves and fennel seeds for a few minutes until they are aromatic, keep tossing while toasting, be careful not to burn the spices.    4.Bring water to boil, add the vegetable stock powder, add the lemongrass, onion, ginger, shallot, shiitake mushrooms(along with the water that was soaked in), daikon radish, carrots and the spices, once boiled, let it cook over low heat for 15 minutes.  5.Add vegan fish sauce, rock sugar and salt to taste, cook for another 5 minutes.  #cooking #FoodLover #vietnamesefood #pho #soup #yummyfood
