I've already shared this recipe with you, but since we're in the middle of a one pan challenge and this recipe is absolutely perfect, I'm sharing it again as a part of this challenge ❤️🤤 Ingredients: 2 large chicken breasts 300 g pasta 1 red onion 3 cloves of garlic 1 red bell pepper 250 ml heavy cream 1 tbsp tomato paste handful of spinach 2 tsp paprika 1 tsp smoked paprika 2 tsp chilli 1 tsp garlic powder 1 tsp oregano salt & pepper to taste olive oil Directions: Cook the pasta in a pot of salted boiling water until al dente. Season the chicken breasts with salt and pepper, lightly drizzle with olive oil and season with 1 tsp paprika, 1 tsp chilli powder, 1 tsp smoked paprika and 1 tsp garlic powder. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside. In the same skillet, add the minced garlic, chopped red onion and cook for 30 seconds, until fragrant. Add chopped bell pepper and 1 tablespoon of tomato sauce and let it simmer for 1-2 minutes. Add the heavy cream, oregano, 1 teaspoon of paprika, 1 teaspoon of chilli, salt, and pepper to the skillet. Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened. Now add the spinach and cooked pasta.Toss everything together until the pasta is coated in the sauce. Serve in bowls with sliced chicken breasts, garnished with chopped fresh parsley.
