Wheat flour is also authentic. I tend to think flourless kimchi tastes flat. Too much gochugaru is a crutch and leads to consistent but meh kimchi imo

from what I read using the rice flour paste method is a regional thing, and it's commonly done in maangchi's home town so of course now it's popular
