HIGH PROTEIN HEALTHY CHEESECAKE . If you have a sweet tooth like me, but want a healthier dessert option, you’re gonna love these cheesecake bowls. You’d never know that these are low carb, high protein, and low calorie!  I know lots of you have a love-hate relationship with cottage cheese, but trust me, this dessert takes cottage cheese to a whole new level. Even if you’re not a fan, you might just change your mind after giving these a shot!  Here’s how to make it: 1.Grab a food processor. Add 1 container (16oz) of a GOOD cottage cheese. Spend the extra $1 or $2 here, it’s worth it. . 2.To the food processor add 2 eggs, 1 scoop of a good vanilla protein powder, 4 tbsp of powdered monk fruit or allulose, and 1 tsp vanilla extract. . 3.Process really well until its nice and smooth. . 4.Grab a few ramekins. Spray the sides with avocado oil. Fill up about half way or 2/3 of the way with the mixture. They’re going to rise up a bit, so leave room for them to expand. You can make these as big or small as you like. I went with standard ramekins. . 5.Pop them in the oven at 350F for 35-40 mins. Again, if you went with a small ramekin or muffin tins, it’ll take less time. If you went with larger, it’ll take more time. . 6.Remove from the oven (these will rise a bit, then come back down). Let them cool completely, then ideally refrigerate overnight for best texture. . 7.When you’re ready to eat, top with warm wild blueberries (about 2 tablespoons), and some lemon or orange zest for a burst of flavor. .
