WELCOME TO CRUISING THE CARIBBEAN 🏝️ my brand new series showing you how to make some of the best dishes from the caribbean. this is part 1 and were starting this series off with a trip to Belize , to make some Belize Stew Chicken🇧🇿 (4) Achiote paste: 2 tbsp achiote seeds 2 cloves 1 tsp black peppercorns 1 tsp cumin seeds 1/2 tsp coriander seed 3 garlic cloves 1 tbsp white wine vinegar Stew: 1kg chicken cut up (thighs, drums etc) 4 tbsp achiote paste 1 tbsp coconut oil 1 tsp ground cumin 4 sprigs fresh thyme 1/2 tbsp soy sauce 1 tbsp vegetable oil 3 tbsp brown sugar 1 brown onion sliced 1/2 red/green/yellow pepper sliced 1 large tomato 1 stalk green onion diced 3 garlic cloves minced 1 thumb ginger minced Rice & beans: 1/2 brown onion finely diced 1/2 green pepper finely diced 1 cup washed long grain rice 250g cooked red kidney beans 1 cup coconut milk 1 cup water  1/2 tsp browning (optional - for the colour) Salt to taste (1) Make the achiote paste by toasting all the whole spices on a medium heat for 1 minute until fragrant. Then add to a pestle & mortar or blender, alongside the garlic & vinegar and blend until smooth. Add to a bowl of washed chicken alongside the coconut oil, cumin, thyme and soy sauce. Mix well and let marinate overnight (2) To make the stew, heat up a large pot and add some oil, then add the sugar and heat on a medium heat, stirring occasionally until it darks dark brown. Then add the chicken, leaving the remaining marinade behind. Brown the chicken for a few minutes. Then add the onion, tomato and pepper, cook for 10 minutes on a medium heat. Grate in the ginger and garlic and cook for a further 3 minutes. Now fill up the marinade bowl with water and add that to the pot, ensuring the water just covers the chicken. Cook part covered for 25 minutes. (3) In the meantime, heat up a pot with a dash of oil and add the onion and green pepper. Cook until fragrant and soft. Add the washed rice and immediately mix. Add the dried thyme, beans, coconut milk and browning. Mix well, season with some salt to taste, bring to a simmer and cover and cook for 20 minutes. After 20 minutes, remove from the heat and let sit for a further 10 minutes, then fluff up and ready to go. 
(4) Once the stew has simmered for 25 minutes add the green onion, taste and adjust salt levels and enjoy with some fried plantain :) #caribbeanfood #stewchicken #belize #belizeanfood #tiktokfood #fyp
