Cabbage Rolls 📕Recipe here: ❂ Ingredients: 1 Napa Cabbage (10-12 leaves) 1 1/4 cup Jasmine Rice 1 Carrot 1/2 Onion 1/2 bunch of Scallions  1/2 inch Fresh Ginger 3 Cloves of Garlic 1/2 Chili pepper  1/4 cup Soy sauce  400g. Mushrooms Sesame seeds  Salt/Pepper to taste Sauce: 1 Tsp sesame oil 1 Tsp Chili pepper  1/2 Tbsp ginger minced 1 garlic cloves minced 2 Tbsp Tamari 1 Tbsp rice vinegar  1  Tsp maple syrup  1/2 cup (120 ml) water 1/2 tbsp cornstarch ❂ Cooking process:  ⁃ Trim off the root of the cabbage, carefully take off the leaves one by one, bring a pan of water to boil, blanch the leaves for 1 minute or so until soft and flexible, yet not soggy. Then quickly ran them under cold water to cool down.   ⁃ In a large frying pan, heat a drizzle of oil over medium-high heat, sauté the onion, garlic, ginger, chili pepper,carrot, mushrooms, scallions and soy sauce. Then add cooked rice and mix well.  ⁃ Place 1 1/2 tablespoons of filling to the bottom of each cabbage leaf. Roll until you reach the wider part of the leaf, then fold up both sides to the center and continue rolling to the end.  ⁃ Pan-fry the cabbage rolls for 2-3 minutes each side until golden brown.  ⁃ Make a sauce: Heat oil in a saucepan, then add ginger, chilli pepper, garlic, tamari, rice vinegar, maple syrup. Let it cook for about 1-2 minutes. Mix the water with cornstarch to make a slurry and pour it into the skillet. Cook the sauce for a few more minutes until thickened.   ⁃ Pour the sauce over the cooked rolls and sprinkle with sesame seeds and greens! Megrelian Khachapuri Thanks @eratec.de for your new «Tasfirin» pizza oven, which perfectly allowed us to prepare this authentic recipe. 📕Recipe here: ❂ Ingredients: 500g. Suluguni Cheese (can be replaced with Mozzarella cheese)  300g. Circassian cheese (can be replaced with Brynza, Feta cheese or Farmer cheese) 200.g Suluguni cheese for sprinkling 230g Milk 7g. Dry yeast  15g. Sugar 5g. Salt 3 Egg Yolks 30g. Butter 450g. Flour 1 Egg white  ❂ Cooking process:  ⁃ Combine dry yeast with a pinch of sugar and pour in warm milk.  ⁃ After 15 minutes, when the yeast has activated, add the egg yolks, salt and melted butter. Mix well until smooth and add sifted flour.  ⁃ Knead the dough in a dough mixer for about 5 minutes or 10 minutes by hand.  ⁃ Cover the kneaded dough with a towel and leave for 1-1.5 hours.  ⁃ While the dough is resting, grate the cheese. 200g. leave the cheese for sprinkling . Add 2 egg whites to the grated cheese and leave one white for greasing the khachapuri. Mix well.  ⁃ Divide the cheese mixture into 2 parts and form into a balls.  ⁃ Divide the dough into 2 parts and form two balls. Cover the balls and leave for 10 minutes.  ⁃ Set the oven to 375F  ⁃ Roll the dough into a small circle with your hands, place a ball of cheese in the center of the circle and stretch the dough in a circle over the cheese, pinching it on top.  ⁃ Having covered the cheese well, flatten the dough first with your hands and then with a rolling pin into a circle about 11 inches.  ⁃ Leave the dough for 10 minutes.
