HOWEVER, people tend to overdo creaming when it comes to cookies. Unless you want thin and crispy, only cream to a paste, not light and fluffy.

I find when I cream butter and sugar, it always looks ‘split’ and quite runny. Llike when you get water in melted chocolate.. never fluffy!any ideas?
