Just kidding. I overcooked my chicken for many years. It wasn’t until i said “f*ck it, if we get salmonella, we get salmonella” that i started making the juiciest and tastiest chicken. Here’s how to make breaded chicken, i use this specific recipe for my chicken parm. 1. Slice the breasts in half so they are thinner. 2. You’re going to dip them in this order: flour, egg, flour, breading. 3. You’ll then put the breaded chicken on a drying rack for at least 15 minutes. This ensures the breading will stick well when you fry it. 4. In your preheated oil, you’re going to fry your chicken until it’s golden brown, then flip it and wait until the other side is golden brown. 5. Please buy a meat thermometer. Insert the thermometer in the thickest part of your chicken and make sure it reads 165* 6. Take it out and rest it on paper towels and salt it. 7. Let it rest for a few minutes and it’s done! In all seriousness, the key to not overcooking your chicken is using a meat thermometer. No more guessing.
