Sticky pecan caramel cinnamon rolls For botanicals week in my GBBO series, I HAD to make some cinnamon rolls and these are extra special. Soft, fluffy dough on sticky pecan caramel.. so so good. Enjoy! Ingredients  14 g quick, dry yeast 450g soy milk 110g caster sugar 110g melted butter 700g plain white flour ½ tsp salt Filling: 100g butter  1 tbsp cinnamon powder 75g soft light brown sugar Caramel: 8 tbsp butter  120g double/ heavy cream  8 tbsp soft light brown sugar  150g pecans  Instructions  1. Warm your milk up until it is luke warm. Pour into a large bowl. Add the sugar and yeast. Combine together with a whisk very briefly, for 1-2 seconds. Let it sit for 5 minutes.
2. Add the melted butter, 600g flour and salt to the yeast bowl. Spoon together. Then, add your dough to a standing mixer with a dough mixer attached. Place it on a slow speed. Add the rest of the flour (100g/ 1 cup) as it mixes. A dough ball should form and the dough should pull away from the sides of the mixer. When it does, you can stop the mixer. Add slightly more flour if needed.  3. Cover your bowl with a towel and let it rise for 30 minutes in a warm area. 4. Pre-heat your oven to 180°C/ 356°F. 5. Flour your surface then put the dough onto the surface then scatter some more flour on top. Use a rolling pin to roll the dough out into a large rectangular shape (around 2 cm thick). 6. Scatter your pecans into a baking tray. Place your caramel ingredients into a bowl and place into the microwave for 60 seconds. Mix and then pour on the pecans. 6. In a small bowl, combine your filling ingredients. Spread onto the dough. Then, roll them up! 7. Cut the dough up into even sized rolls with floss. I cut 12 rolls and discarded the ends. Add on top of the pecans and bake for 20 minutes. 8. Cut them, flip and enjoy! If you eat in the days after, microwave for 20 seconds.
