usually discoloration is a lack of nitrogen. if the tips of the leaves are burnt it's root lock. which can cause discoloration

bottom leaves doing that is a sign that the soil needs more magnesium from what I have found. having the same issue with one of my containers too

I think a small basket would be plenty for 2 people. Usually they spray grocery store potatoes with a chemical that’s supposed to keep them from sprouting but I get plenty of sprouts on my potatoes!!

I learned to keep them as long as the leaves r green & harvest when all green is brown, my 3rd year🥰

What everyone else said - plus they soils also benefit from some deeper soil. A little more hilling in that shallow basket.
