Eggplant Little Shoes.. that’s how the Greek name of this dish is translated in English! Papoutsakia is a healthier version of pastitso because the pasta is replaced with eggplant. All the rest ingredients are the same.. one layer of meat sauce, one layer of Bechamel and grated cheese on top.. just heaven😋! You need to constantly stir, either way it will burn on the bottom. When it thickens take it out of the heat and immediately add the yolks.
