Quiche Lorraine  Ingredients Dough - 250 gr flour - 100 gr butter - A splash of water - A touch of salt filling - 175 gr gruyère - 4 eggs - 300 gr smoked bacon - A few thyme sprigs - 5 white onions - 200-250 ml heavy cream - 125-150 gr crème fraîche - Pepper - Rocket for garnish How to: 1. Make small cubes of some cold butter and mix it with the flour until a crumble mixture. 2. Add salt and a splash of water to the crumbs and mix until a dough consistency. make a flat square, wrap with plastic wrap and let rest for 20 minutes in the fridge 3. Cut the bacon into small cubes and add them to a dry pan to crispy up. Set aside, but leave the grease in the pan. 4. Finely mince the onions and let them caramelize in the bacon grease with some thyme 5. Roll out the dough so that it can cover your quiche spring. grease the tray with butter and layer in the dough.  6. Make little holes in the bottom with a fork.  7. Put some baking paper and a blind baking filling onto the dough.  8. Bake at 180 degrees celsius or 350 degrees fahrenheit for about 15-20 minutes with filling and 5 minutes without.  9. Make the filling by combining the eggs, with the heavy cream, crème fraîche, thyme and almost all the grated cheese.  10. Layer the onions onto the quiche followed by the egg mixture, bacon and the leftover cheese. sprinkle with some thyme and bake in the oven until golden brown and cooked through (about 40 minutes).  11. Optional make a little quiche with the leftover dough and filling! 12.
