Potato Pakora is a popular Indian snack made with thinly sliced potatoes, onion, aromatic spices and besan flour, also known as chickpea flour. The mixture is deep-fried until golden and crisp, creating pakoras that are wonderfully crispy on the outside while remaining soft and flavourful inside. Potato Pakora Makes approximately 25 pakoras Ingredients 1 large potato (about 350 g) 1 large onion (about 125 g), finely chopped 30 g coriander leaves, chopped A few curry leaves, chopped 1 green chilli, finely chopped, or to taste 1 tsp cumin powder 1 tsp coriander seeds, lightly crushed ½ tsp ajwain seeds 1 tbsp dried fenugreek leaves ½ tbsp salt, or to taste A pinch of turmeric powder ½ tbsp chilli flakes ½ tbsp chilli powder 2 tbsp rice flour 1½ cups besan flour (about 180–200 g) A pinch of baking soda Oil, for deep frying Method Peel the potato and cut it in half. Then cut it into thin matchstick-sized pieces. Wash the potato thoroughly twice, then drain well and pat dry with a kitchen towel. Transfer to a large bowl. Add the chopped onion, coriander leaves, curry leaves and green chilli. Add the cumin powder, lightly crushed coriander seeds, ajwain seeds, dried fenugreek leaves, salt, turmeric powder, chilli flakes, chilli powder, rice flour, besan flour and baking soda. Mix everything thoroughly until the ingredients are evenly combined. Cover and leave the mixture to rest for 15 minutes. After resting, check the consistency before adding any water. The onion will release moisture as it rests, which may be enough to bring the mixture together. If the mixture is still too dry, add 1–2 tablespoons of water gradually and mix well. Do not add too much water. The mixture should be thick enough to coat the potato pieces rather than becoming a runny batter. Heat oil in a deep pan over medium heat. Once the oil is hot, take small portions of the mixture with your fingers and carefully drop them into the oil. Fry in batches until golden brown and crispy, turning occasionally so they cook evenly.
