🍓 Koso drink is a century-old japanese traditional fermented drink made from fruits, and plants and is the perfect way to avoid wasting overripe fruits. 

It has proven to keep your gut healthy, as any other fermented food and also a great way to preserve spring and summer in a jar.

I love to use it as a syrup for a homemade soda, to add on cocktails, on a yogurt bowl and even to drizzle on a piece of cake ;-) 

RECIPE - Organic fruit of your choice, preferably ripe and juicy (rhubarb, apples, berries, any citrus…) - Organic sugar 
- Herbs if you’d like to add another layer of flavour (basil, rosemary, mint, shiso, etc)

1. Like a lasagne, alternate a layer of fruit, then a layer of sugar, always ending with a layer of sugar.
2. Stir your koso once or twice a day.
3. After 3 days, all the sugar should have dissolved.
4. Leave your koso to stand for 1 week away from direct sunlight, after which time you should see the fruit rise and fine bubbles appear. Strain the drink
5. You can now consume your koso and store it in the fridge for up to a year.
