MEAL PREP WITH ME 🍽️ For this weeks meal prep we have some Cookie Dough Blended Oats for breakfast and Creamy Pesto Pasta Bakes for lunch. Save for your next meal prep☝🏼 Cookie Dough Blended Oats: •480 kcals - 36g PRO, 54g CHO, 14g FAT Serves 3: -120g of oats -3 tbsp of chia seeds -45g of cookies & cream protein powder -25g of peanut butter -360ml of slimline milk -240g of 0% non fat greek yoghurt -1 tsp of vanilla essence Toppings: -60g of 0% non fat Greek yoghurt -15g of chocolate chips -1 packet of mini cookies, crushed Method: 1. Blend all of the ingredients together until smooth. 2. Pour into 3 jars. Top with the yoghurt, chocolate chips and crushed cookies. 3. Leave in the fridge overnight and for up to 3 days. Creamy Pesto Pasta Bakes: •412 kcals - 43g PRO, 40g CHO, 12g FAT Serves 3: -150g of uncooked pasta -Oil spray -1 red onion, diced -2 cloves of garlic, minced -300g of uncooked chicken breast -1 tsp of paprika -1 tsp of mixed herbs -Half a knorr chicken stock pot -30g of pesto -30g of light cream cheese -Salt/pepper -30g of mozzarella -30g of cheddar, grated Method: 1. Boil and cook pasta for 8-10 minutes until al dente. Save pasta water. 2. Spray a pan with oil. Add red onion and garlic and fry for 5 minutes with a dash of water. 3. Add chicken along with paprika and mixed herbs. Fry for another 5 minutes. 4. Mix in the green pepper. Add the chicken stock pot, pesto, cream cheese and most of the pasta water. Stir together. 5. Add in the cooked pasta and let it simmer for 5 minutes. Season with salt and pepper. 6. Transfer to 3 oven safe dishes and top with the cheese’s. 7. Place in the oven at 180°C for 10-15 minutes. 8. Reheat for 3 minutes in the microwave when ready to eat. Store in the fridge for up to 3 days. SWEET AND SOUR CHICKEN BOWL 🍚 You need to try this delicious, high protein sweet and sour bowl! Make sure to save for your next meal prep☝🏼 •550 kcals per portion •39g PRO, 62g CHO, 19g FAT Serves 2: -200g of uncooked chicken breast (or use protein of choice e.g. tofu/beef) -1 egg -Salt/pepper -2 tbsp of cornflour -2 tbsp of vegetable oil -1 onion, chopped into chunks -2 peppers, chopped into chunks -2 cloves of garlic, minced -1 pack of microwave basmati rice -1 carrot, julienned or grated -1 spring onion, diced -Sesame seeds Sauce: -90g of reduced sugar ketchup -60ml of reduced salt soy sauce -2 tbsp of oyster sauce -5 tbsp of white wine vinegar -2 tbsp of sweetener (I used Splenda) -100ml of water -1/2 tsp of cornflour mixed with warm water Method: 1. Dice the chicken breast and add to a bowl along with the egg, cornflour, salt and pepper. Mix well and let sit in the fridge for 20-30 minutes. 2. Chop the peppers and onion into chunks. 3. For the sauce, mix the ketchup, soy sauce, oyster sauce vinegar and sweetener together. Set aside. 4. Add 2 tbsp of oil to a hot pan and then add the chicken. Let it fry for 5 minutes then flip each piece over. Keep frying until browned and crispy. Remove and set aside once done. Place on a plate with kitchen paper to soak up the oil. 5. On the same pan add in the garlic and onion. Fry for 2 minutes with a dash of water then add in the peppers. 6. Add the sweet and sour sauce to the veg along with 1/2 tsp of cornflour mixed with a little water. Then add 100ml of water to the sauce and let this come to a boil. Reduce the heat and let it simmer for 5 minutes or so until the sauce thickens up. 7. Add back in the chicken. Mix and simmer for a few minutes. 8. Microwave the rice and divide into 2 portions. Add the sweet and sour to each bowl. Top with the julienned carrot, spring onion and sesame seeds.
