Dairy-Free Mashed Potatoes Ingredients: • 10 gold potatoes • 8 oz Pacific chicken broth • 1/2 stick vegan butter • 4 oz vegan sour cream • Salt, pepper, and garlic powder (to taste) Instructions: 1. Wash, peel, and cut the potatoes into chunks. 2. Boil potatoes until fork-tender, then drain and let rest for 5 minutes. 3. Add the chicken broth, vegan butter, vegan sour cream, and seasonings. 4. Mash lightly until your desired consistency. 5. Taste and adjust seasoning if needed. (For dairy free ingredients I used Earth Balance butter and Violife sour cream)
