🍁🎃 Pumpkin Cheesecake Puff Pastry Rolls Makes: 18 rolls Puff Pastry * 2 sheet puff pastry, thawed but cold * 1 tbsp granulated or coarse sugar * ½ tsp cinnamon Creamy Pumpkin Cheesecake Filling * 8 oz cream cheese, softened * ½ cup pumpkin purée * ⅓ cup powdered sugar * 1 tsp vanilla * 1 tsp pumpkin pie spice * ½ tsp cinnamon * Pinch of salt * ½ cup heavy whipping cream 1. Make the puff pastry shells Preheat your oven to 375 F. Cut the puff pastry into 18 long strips. Roll each around a cannoli tube. Place on baking sheets lined with parchment paper. Roll top half with cinnamon sugar. Bake at 375°F for 15-18 minutes, until deeply golden and puffed. 2. Make the pumpkin cheesecake filling. Beat the cream cheese and powdered sugar until completely smooth. Add pumpkin, vanilla, pumpkin pie spice, cinnamon and salt. Beat until creamy. In a separate bowl, whip the heavy cream until soft peaks form. Fold it into the pumpkin mixture. This gives you a light, mousse-like cheesecake filling rather than something dense. 3. Fill after baking. Once the pastry shells have completely cooled, pipe the pumpkin cheesecake mixture inside each pastry. Enjoy! #dessert #EasyRecipe #falltreat#falltreatsn#cozybakingn
